Soy Chili Garlic Wings

Make these wings for any occasion, they are spicy and sweet!


  • 16 ounces white wine vinegar
  • 7 1/2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1 cup brown sugar
  • 8 ounces honey
  • 7 1/2 ounces chili sauce
  • 12 ounces garlic, minced
  • 4 tablespoons oyster sauce
  • 1 1/4 tablespoons fresh ginger, peeled and minced
  • 7 1/2 tablespoons black pepper
  • 1 1/4 tablespoons salt
  • 1 1/4 tablespoons crushed red pepper
  • 4 pounds chicken wings
  • basic brine, see recipe
  • alder wood, for smoking


  • 1. Brine the chicken wings for 45 minutes.
  • 2. Dissolve the cornstarch in the soy sauce. Place all ingredients except wings in a sauce pot over medium high heat. Bring to a simmer and let cook, stirring occasionally, for 5-6 minutes or until sauce thickens. Keep the sauce warm.
  • 3. Remove from the brine. Preheat the EGG to 225º using indirect heat and the smoking wood. Smoke the wings for 1 hour, or until an internal temperature reaches 165º and the chicken is cooked throughout.
  • 4. Toss the wings in the sauce. Convert the grill to direct heat at 400º. Grill the wings a few minutes on each side until they are slightly crispy.
  • 5. Serve the wings with any additional sauce.
