Smoked Wild Boar Shoulder

This wild cousin of the domesticated pig is just as delicious.


  • 3 pounds wild boar shoulder
  • 1/2 cup Dizzy Pig Rub
  • For the Braising Liquid:
  • 2 cups water
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • hickory wood


  • 1. Rub the boar with the Raging River Dizzy Pig Rub. Set aside.
  • 2. Preheat EGG to 225 degrees set for smoking, place the boar directly on grate and smoke with hickory wood for 2 hours or until internal temperature reaches 190 degrees. Remove from EGG.
  • 3. In a roasting pan, combine the water, mustard and honey. Add the boar to the roasting pan. Braise the boar at 300 degrees for 1 hour or until the meat begins to fall apart. Remove from the EGG. Serve hot with the braising liquid.
