Smoked Shrimp Salad

The orange wood smoke adds a light fruitiness.


  • 24 ea Shrimp , smoked wtih orange wood
  • 12 oz Frisee
  • 12 oz carrots, shredded
  • 6 oz Prosciutto, torn
  • 1/4 c. orange juice
  • 2 tablespoons red wine or sherry vinegar
  • 1/4 tsp. cinnamon
  • 1 tablespoon toasted coriander seeds
  • salt & pepper to taste
  • 1/2 c. olive oil


  • 1. Pre heat Egg to 300ºF with plate setter and set up for smoking. Smoke shrimp for 10-15 min. Combine last six ingredients to make dressing and toss lettuce and carrots. Serve with shrimp and prosciutto.
