Smoked Pork Loin

This pork loin is smoked with bourbon barrel chunks and features Dizzy Pig's Swamp Venom Rub.


  • 4 4 oz pork chops, trimmed
  • swamp venom rub, as desired
  • bourbon wood chunks
  • basic brine, see recipe


  • 1. Brine the pork for 30 minutes. Remove from the brine and rub with the Dizzy Pig Rub as desired.
  • 2. Preheat the EGG to 225º using indirect heat and the smoking wood. Smoke the pork until an internal temperature reaches 140º, about an hour. Let it rest for a few minutes before slicing and serving.
