Smoked Chicken Deep Dish Pizza

This is crust is thick, chewy and delicious!


  • For the Chicken:
  • 1/2 whole chicken
  • to taste kosher salt
  • to taste fresh ground black pepper
  • For the Pizza:
  • 18 ounces deep dish/pan pizza dough recipe
  • 6 ounces shredded cheddar cheese
  • 6 ounces fire roasted salsa recipe or your favorite salsa
  • all Reserved smoked chicken
  • 1 each red peppers, grilled and small diced
  • 3 ounces sour cream
  • 1 ounce lime juice
  • 2 ounces tortilla chips, crumbled
  • 1 chunk apricot wood


  • 1. For the Chicken:
  • 2. Preheat an EGG to 225 degrees F, set up for smoking with a plate setter, apricot wood, disposable half aluminum pan filled half way with water and a stainless steel grate.
  • 3. Using kitchen shears, cut the back/spine off of the chicken. Season with kosher salt and fresh ground black pepper. Smoke on stainless steel grate until the thickest part of the breast reaches an internal temperature of 165 degrees F. Remove the chicken from the EGG and let cool.
  • 4. Once cool enough to handle, remove the skin and discard. Pull the meat off the bone and set aside.
  • 5. For the Pizza:
  • 6. Prepare your dough as instructed per the deep dish/pan pizza dough recipe.
  • 7. Place dough in a cookie sheet with an extender lined with parchment. Liberally butter parchment and season with a light sprinkle of salt. Or use a disposable half aluminum pan, generously greased.
  • 8. Combine the lime juice and sour cream together until desired flavor is achieved. Spread salsa over the pizza, then chicken and peppers, then cheese, bake in a 400° indirect EGG for approx 30-40 min or until crust reaches an internal temp of 210°. Finish with the lime sour cream and tortilla crumbles.
