Smoked Bologna

This is a fun take on a childhood favorite.

Ingredients

  • 2 1/2 pounds whole bologna
  • 1/2 cup yellow mustard
  • 1/4 cup your favorite BBQ rub
  • smoking wood

Directions

  • 1. Score entire bologna with a paring knife 1/2 an inch deep about every inch horizontally and vertically.
  • 2. Brush bologna all over with mustard, and sprinkle with barbecue rub.
  • 3. Preheat EGG to 225°F, using indirect heat, plate setter, drip pan with water and stainless steel grate. Place bologna in the smoker or grill, and smoke until outside has darkened, 2 to 3 hours. Remove from smoker, let cool for 5 to 10 minutes, let rest over night.
  • 4. Preheat EGG 400° Using direct heat and a cast iron grate. Slice the smoked bologna approx. 1/2 inch thick and grill 2 min each side or just until lightly browned, pull off EGG and let rest 2 min. Dice and serve.
