Short Rib Noodle Salad

This refreshing salad features kimchi, which is korean pickled cabbage, and is perfect for any summer day.


  • 8 ounces Soba noodles
  • 1/2 cup chopped Kimchi
  • 1 teaspoon sesame oil
  • 2 tablespoons Kimchi juice
  • Short Ribs:
  • 1 rack short ribs
  • 1 tablespoon fennel seeds, ground
  • 1 tablespoon cloves, ground
  • 1 tablespoon mustard powder
  • 1 tablespoon black pepper
  • 1 tablespoon star anise, ground
  • 1 cup salt
  • 1 cup brown sugar


  • 1. Mix together the rub for the short ribs. Rub the ribs and let them marinate in the refrigerator for 2 days.
  • 2. Preheat the EGG to 325º using indirect heat. Roast the ribs until an internal temperature reaches 160º and the ribs are tender. Let rest for 10 minutes, then cut off the bone if desired.
  • 3. Bring 1 quart of water to a boil. Add Soba to boiling water and cook for about 5 minutes. Strain noodles into a colander and rinse 2-3 times under cold running water. Drain well. Combine noodles, chopped kimchi, the juice and oil in a bowl. Serve with the short ribs.
