Sesame Noodle Salad

This salad is light, refreshing and very simple to make!


  • Kosher salt, to taste
  • 1/4 cup sesame seeds
  • 1/2 lbs. sweet mini peppers, cut in half and seeded
  • 2 small carrots, halved lengthwise
  • 1/4 cup mayonnaise
  • 1 tablespoon mayonnaise
  • 2 teaspoons unseasoned rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar
  • Pinch of cayenne pepper
  • 8 ounces glass noodles, cooked
  • green onion, for garnish


  • 1. In a medium skillet, toast the sesame seeds over moderate heat, shaking the pan a few times, until golden brown, about 4 minutes. Spread the sesame seeds on a plate and let cool completely.
  • 2. In a mini food processor, pulse the sesame seeds until coarsely ground. Add the mayonnaise, rice vinegar, soy sauce, sugar and cayenne and process to blend. Season the dressing with salt.
  • 3. Preheat the Egg to 400º using direct heat and a cast iron grate. Grill the peppers and carrots until char marks form and they have softened slightly. Remove from the grill and chop. Toss the noodles with the dressing and the vegetables and garnish with green onions.
