Sesame Noodle Salad

Nutritional Information

This recipe combines soba noodles, cucumbers and kimchi, a pickled korean accouterment.


  • 8 ounces soba noodles
  • 1/2 cup chopped kimchi, can be found in specialty isles or markets
  • 1 teaspoon sesame oil
  • 2 tablespoons kimchi juice
  • Cucumbers:
  • 1 1/4 cups sake
  • 3/4 cups rice vinegar
  • 1/4 cups sugar
  • 2 english cucumbers, sliced thin
  • salt and pepper, to taste


  • 1. Combine all of the ingredients for the cucumber pickles except the cucumbers. Bring to a boil until the sugar dissolves. Remove from the heat and add the cucumbers. Chill until ready to use.
  • 2. Bring 1 quart of water to a boil. Add Soba to boiling water and cook for about 5 minutes. Strain noodles into a colander and rinse 2-3 times under cold running water. Drain well.
  • 3. Combine noodles, chopped kimchi, the juice and oil in a bowl. Garnish with the cucumbers.
