Seasonal Fish with Vegetable Marmalade

This recipe is easily adapted to any season

Ingredients

  • 1 pound seasonal fish
  • 1 RIPE TOMATO – SMOKED
  • ¼ cup BLACK OLIVES
  • 1 tablespoon CAPERS
  • 1 PINCH SAFFRON
  • 1 BELL PEPPER – GRILLED
  • 1 LEMON
  • 1 SHALLOT- GRILLED
  • 10 BASIL LEAVES
  • 2 tablespoons VEG OIL-FOR GRILL
  • 2 tablespoons OLIVE OIL – FOR SAUCE

Directions

  • 1. Pre heat Egg to 450ºF with cast iron grate for direct heat. Rub fish with desired rub.
  • 2. Grill red peppers and shallots and cut them into small dice. Add them to sauce pot with remaining ingredients and reduce by half. Adjust salt and pepper, and serve over fish.
