Seared Scallops

Nutritional Information

When you add the baking soda it will help get a nice even caramelization on your scallops.


  • 1 lb. Scallops
  • 1 tsp Kosher salt
  • 1/4 tsp baking soda


  • 1. Toss scallops with salt and baking soda. Let sit for at least 1 hour, or up to 4 hours. Next, pat scallops dry and place on a clean, dry plate.
  • 2. Preheat Egg with cast iron grate and cast iron pan or plancha, to 450ºF. Coat pan with a light coating of a neutral oil, preferably peanut or canola.
  • 3. Place scallops, evenly spaced, in the pan and sear until well caramelized. Turn scallops and finish cooking until desired doneness is achieved.
