Scallop Burgers

These are light, refreshing and unique take on the traditional burger.


  • 1/2 cup mayonnaise
  • 3 tablespoons ketchup
  • Tabasco sauce
  • Kosher salt and freshly ground pepper
  • 1 1/2 cups of corn kernels
  • 1 1/2 cups sea scallops, coarsely chopped
  • Vegetable oil
  • 8 soft hamburger buns, split
  • 8 lettuce leaves
  • 8 thick tomato slices
  • 16 slices cooked thick-cut bacon


  • 1. In a small bowl, blend the mayonnaise with the ketchup. Season with Tabasco, salt and pepper. Refrigerate.
  • 2. Preheat the Egg to 350º using indirect heat. Roast the corn kernels until slightly browned. Remove from the grill and cool.
  • 3. In a food processor, process half of the corn kernels to a paste. Add one-third of the scallops, salt and pepper to taste, and process to a paste. Add the remaining scallops and process until just blended; there should be small lumps of scallop in the mixture. Scrape the mixture into a medium bowl and stir in the remaining corn kernels and season with salt and pepper. With oiled hands, pat the mixture into burgers, then cover and refrigerate them until ready to grill.
  • 4. Preheat the Egg to 400º using direct heat and a cast iron grate. Toast the buns until slightly charred.
  • 5. To roast the burgers: Lay the burger patties on a slightly oiled grill safe pan. Roast at 375º using indirect heat until they are heated throughout, about 8 minutes per side.
  • 6. To grill the burgers: Preheat the Egg to 425º using direct heat and a cast iron grate. Grill the burgers for 2-3 minutes per side until heated throughout.
  • 7. Spread a thin layer of spicy mayonnaise on both halves of the buns. Place the lettuce and tomato slices on the bottom halves and top with the scallop burgers. Top each burger with slices of bacon. Close the sandwiches and serve at once with the remaining spicy mayonnaise on the side.
