Sauteed Spinach

This recipe combines spinach, garlic, onion and peppers to create a flavorful side dish.


  • 3 tablespoons duck fat
  • 2 garlic cloves, finely chopped
  • Pinch of dried crushed red pepper, if desired
  • 2 large bunches spinach, stems trimmed
  • 1/2 small white onion, sliced thin
  • 1 mild anaheim pepper, diced


  • 1. Preheat EGG to 350º F using indirect heat. Preheat a cast iron dutch oven or other grill safe dish. Melt the fat. Add the onions, peppers, garlic and crushed red pepper. Sauté until fragrant, about 1 minute. Add spinach; stir to coat. Cover; cook until tender, stirring occasionally. Season to taste with salt. Transfer to bowl and serve.
