Salted Smoked and Grilled Fingerling Potatoes

These potatoes are well worth the time to prepare.

Ingredients

  • 5 pounds fingerling potatoes
  • 1 cup kosher salt
  • 1 gallon water
  • olive oil
  • fresh herbs

Directions

  • 1. Cover potatoes with water add salt and boil until water is almost Completely evaporated and potatoes have crust of salt. Smoke for ten minutes and then grill until crispy. Do a light toss in olive oil and fresh herbs just before service.
