Ingredients

  • 1 brine recipe, follow as directed
  • 10 pound fresh turkey (not already brined)
  • 1/4 -1/2 cup Mediterranean Dizzy Pig Rub

Directions

  • 1. Prepare brine as directed
  • 2. Rub the outside and under the skin of the turkey with the Mediterraneanish.
  • 3. Preheat the EGG to 325 degrees Fahrenheit using indirect heat; plate setter legs down, drip pan filled with desired liquid and sitting on top of the plate setter, with porcelain rack (V-Rack) on top. Roast the turkey for an average of 15 minutes per pound or until the thickest part of the breast meat reaches an internal temperature of 165 degrees Fahrenheit. Remove the turkey from the EGG and let rest 15-30 minutes before carving.
  • 4. Preheat EGG to 225 degrees fahrenheit set up for indirect heat. Place an aluminum pan directly on the plate setter filled with water and the turkey giblets.
  • 5. Roast turkey 3-4 hours or until the internal temperature reaches 160 degrees farenheit. Remove turkey from the EGG and let rest 10 - 15 minutes before slicing. Use the drippings from the drip pan to make your gravy.

Variation done for the Thanksgiving Master Chef Class on 11/17/14 and 11/18/14: Smoked Turkey Preheat EGG to 225 degrees Fahrenheit. Once the fire is going, add the wood chunks over the hot coals. Set the EGG up using indirect heat, with the plate setter legs up, drip pan filled with desired liquid on top of the plate setter and a porcelain rack on top of that. Place the turkey on the rack and smoke for 35-45 minutes per pound, or until the thickest part of the breast meat reaches an internal temperature of 165 degrees Fahrenheit. Remove the turkey from the EGG and let rest 15-30 minutes before carving.
