Roasted Sweet Potatoes and Apples

Roasted sweet potatoes jazzed up with apples and maple sage butter.

Ingredients

  • 2 1/2 pounds sweet potatoes, peeled, cut into 1/2-inch thick disks
  • 2 ounces canola or vegetable oil
  • 4 ounces unsalted butter
  • 2 medium green or red apples, cut in half and cored
  • 2 tablespoons fresh sage, fine chopped
  • 1 1/2 teaspoons fresh lemon juice
  • 1-2 teaspoons pure maple syrup
  • to taste kosher salt and ground black pepper

Directions

  • 1. Heat EGG to 375 degrees. Toss the sweet potatoes in the canola oil until evenly coated. Grill the sweet potatoes and apples until they have a nice char on them. Remove the sweet potatoes and apples from the grill. Let cool slightly.
  • 2. Chop the apples into bite size pieces and set aside.
  • 3. Chope the sweet potatoes into quarters and place in a roasting pan. Place roasting pan on EGG at 375 degrees and roast sweet potatoes until fork tender about 25 minutes.
  • 4. Remove the sweet potatoes from the EGG, add the apples, sage, lemon juice and maple syrup. Toss together to combine completely.
  • 5. Season to taste with kosher salt and ground black pepper.
  • 6. You can add more butter or maple syrup, if desired.
