Roasted Potatoes and Arugula

This recipe is made with potatoes, parmesan cheese, onions and arugula.

Ingredients

  • 1 pound potatoes, small diced
  • 1/4 large yellow onion
  • 1/4 pound arugula
  • 1/4 cup parmesan cheese
  • olive oil, as needed
  • salt and pepper to taste

Directions

  • 1. Toss potatoes and onions with olive oil, salt and pepper. Preheat the EGG to 450º using indirect heat. Roast until golden and tender. Add arugula and cook 4-5 minutes until arugula has wilted. Toss in cheese and season to taste.
