Roasted Parmesan and Garlic Edamame

Roasted soy beans, that are great for snacking on.

Ingredients

  • 3-4 tablespoons olive oil
  • 1/8 cup garlic powder
  • 1/4 cup Parmesan cheese, grated
  • 10 ounces Edamame pods
  • to taste kosher salt

Directions

  • 1. Preheat EGG to 350 degrees F, using indirect heat and a stainless steel grate. Line a baking sheet with foil and grease with pan spray. Set aside.
  • 2. Place edamame in a large bowl. Add the oil, garlic powder and parmesan cheese. Toss to coat edamame thoroughly. Pour onto the baking sheet in one layer. Bake for 25 minutes or until crispy. Let cool slightly. Adjust seasoning with kosher salt. Serve warm or at room temperature.
