Roasted Halibut Steaks with Blackberry Sauce

Nutritional Information

In this recipe, the halibut is finished with a savory blackberry sauce, however any type of berry can be used.


  • basic brine, see recipe
  • 24 ounces halibut steaks
  • 1/2 cup chicken stock
  • 1/4 cup balsamic vinegar
  • 1/4 cup orange juice
  • 1 teaspoon honey
  • 1 tablespoon cornstarch
  • 1/4 cup chicken stock
  • 1 cup fresh blackberries
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons olive oil
  • salt and pepper to taste


  • 1. Brine the halibut for no more than 30-45 minutes for fillets. If the fish is in one large piece it can be brined for up to 1 hour.
  • 2. Pour first chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in remaining chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Stir in the blackberries and thyme, and keep warm over low heat.
  • 3. Preheat the Egg to 400º using indirect heat. Season the halibut with salt and pepper.
  • 4. Roast until the fish begins to flake, about 20 minutes depending on the size of the fillets. Remove from the Egg and serve with blackberry sauce.
