Roasted Green Beans with Bacon

A savory side dish.


  • 1/2 pound Goose the Market Jowl bacon
  • 5 each small shallots, thinly sliced
  • 2 1/2 pounds greens beans, trimmed and cut into bite size pieces
  • to taste kosher salt
  • to taste ground black pepper


  • 1. Render jowl bacon in a pan and cook until crisp. Remove the bacon from the pan (reserve the drippings) and place on paper towel to remove excess drippings.
  • 2. Saute the shallots in the bacon drippings until tender, about 2-3 minutes. Set aside. Place the green beans in a large bowl. Add the sauteed shallots and bacon drippings. Toss to combine and coat the green beans in the drippings.
  • 3. Preheat EGG to 350 degrees F using indirect heat. Place the green beans in a roasting pan, cover with foil.
  • 4. Roast covered for 25 minutes. Remove the foil and continue to roast until the green beans are tender. Remove from the EGG and season to taste with kosher salt and ground black pepper
