Roasted Duck Confit

Confit means to cook in its own fat, which makes this recipe succulent and delicious!


  • 1 whole skin on duck
  • 1/2 pound gizzards
  • 3 cloves garlic
  • 1/2 tablespoon peppercorns
  • 1 tablespoon salt
  • 1/2 pound butter
  • 2 bay leaves


  • 1. Preheat the EGG to 300º using indirect heat and a cast iron dutch oven. Combine all of the ingredients in the dutch oven. Roast for 3 hours. Remove from the EGG and rest with the lid on for 1 hour. Remove the lid and pick the meat from the carcass. Season to taste and serve.
