This recipe is for a whole duck that is roasted on the EGG.
Ingredients
- 1 whole duck
- 2 cups boiling water
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 tablespoon basil
- 1 tablespoon oregano
- 1 tablespoon thyme
- 2 tablespoon salt
Directions
- 1. Pour the boiling water over the duck skin (breast side). This will tighten the skin to help it crisp up.
- 2. Combine the dry ingredients to form a rub. Rub the duck with the rub and refrigerate for 2 hours.
- 3. Preheat the EGG to 400º using indirect heat. Roast the duck for 45 minutes with the breast side facing up. After the first 45 minutes, flip the duck so the breast side is down and roast for 45 minutes more. After the second 45 minutes, flip it one more time so the breast side is up and roast for 45 minutes more. (should be a total of 2 hours and 15 minutes.)
- 4. Remove from the EGG and let rest for 15 minutes before carving as desired.
