Roasted Beef Tenderloin

Slow roasting beef tenderloin gives it the perfect texture. You can also add wood chunks to this recipe if a smokey flavor is desired.


  • 2 pounds beef tenderloin, trimmed
  • 4 tablespoons olive oil, more if needed
  • 2 ounces basil, minced
  • 12 cloves garlic, minced
  • 8 green onions, minced
  • 1 tablespoon salt, or to taste


  • 1. Combine the basil, garlic, onions, salt and enough olive oil to create a paste.  Evenly rub the tenderloin with the rub. Very tightly wrap with saran wrap and let sit overnight in a refrigerator.
  • 2. Before cooking, bring tenderloin closer to room temperature.
  • 3. Preheat EGG to 225ºF using indirect. Roast the beef until an internal temperature reaches 130º or until desired doneness.
  • 4. Let beef rest for 10 minutes before slicing and serving.
