Roasted Banana Chantilly with Popcorn and Caramel

  • For the Banana Chantilly:
  • 1 1/4 cups whole milk
  • 3 each large egg yolks
  • 1/3 cup granulated sugar
  • 1/6 cup cornstarch
  • 1 tablespoon vanilla bean paste
  • 2 each large bananas, peeled and sliced lengthwise
  • 1/2 cup heavy cream, whipped
  • For the Buttermilk Caramel:
  • 1/2 cup sugar
  • 1/4 cup buttermilk
  • 1 ounce unsalted butter
  • 1/2 tablespoon light corn syrup
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 5 ounces Peanut Butter White Chocolate Popcorn from Just Pop In


  • 1. For the Banana Chantilly:
  • 2. Preheat EGG to 400 degrees F, using indirect heat, a plate setter and a stainless steel grate.
  • 3. Place sliced bananas onto a greased baking sheet and roast 10-15 minutes or until golden brown. Remove bananas from the EGG and let cool completely. Once cooled, cut the bananas into small cubes. Set aside.
  • 4. In a bowl, whisk together the egg yolks, sugar and cornstarch until smooth. Set aside.
  • 5. In a medium sauce pan, scald the milk on low-medium heat. Remove from the heat. Temper the scalded milk into the egg yolk mixture, using a whisk.
  • 6. Return the egg-milk mixture to the sauce pan and cook on medium. Continue to whisk until thickened to a pudding consistency. Remove from the heat, pass the pastry cream through a strainer into a bowl. Cover with plastic wrap directly onto the pastry cream to prevent a skin from forming. Cool completely in the refrigerator.
  • 7. Once the pastry cream is cooled, take 1/3 of the whipped heavy cream and whisk it into the pastry cream. Using a rubber spatula, fold the rest of the whipped cream into the pastry cream. Next fold in the diced bananas.
  • 8. Evenly distribute the banana chantilly among 10 bowls. Garnish each bowl with 1/2 ounce of popcorn and drizzle with caramel. Serve immediately.
  • 9. For the Caramel:
  • 10. In a small sauce pan, bring all the caramel ingredients to a boil, stirring until the sugar dissolves. Continue to boil until the mixture becomes a deep amber in color, whisking often, about 3-4 minutes. Remove from heat and cool.
