This sweeter pickle is great on its own or as an accompaniment for charcuterie or dessert.
Ingredients
- 1 pound watermelon rind
- ½ cup apple cider vinegar
- ½ cup water
- ½ cup sugar
- 1 ounce ginger
- 2 tbsp. kosher salt
- 1 tsp red pepper flakes
Method
- Remove skin from rind and cut into 1/2 inch cubes. Place in a sanitized jar or container.
- Combine vinegar, water, sugar, ginger, salt, and chili flake in a sauce pot. Bring to a simmer.
- Once simmering and sugar and salt are dissolved, remove liquid from heat. While still hot, pour liquid over the rind.
- Allow to refrigerate overnight or hold pickles for up to a month.
