Smoked Sausage Trio

Smoking sausage with different woods makes for some interesting flavors.

Ingredients

Method

  1. Set up 3 eggs for indirect smoking. Set to 250 degrees F.
  2. Split sausage into 1 pound portions. Once Eggs are ready place a portion of sausage on each grill to smoke. Allow to smoke until the internal temperature reaches 155 degrees For about 2 hours.
  3. Let sausage cool slightly, cut, and serve.
