These cake like cookies are delicious on their own or work great with buttercream frosting.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 stick unsalted butter, softened
  • 1 1/4 cups sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 cup canned pumpkin puree

Directions

  • 1. Preheat the Egg to 350° using indirect heat. Line baking sheets with parchment paper. In a small bowl, whisk the flour with the baking powder, baking soda, spices and salt. In a large bowl, using a handheld electric mixer, beat the butter with the sugar at medium speed until light and fluffy, about 2 minutes. Beat in the egg and vanilla followed by the pumpkin puree. At low speed, beat in the dry ingredients until evenly incorporated.
  • 2. Using a small spoon or scoop, scoop level tablespoons of the batter onto the prepared baking sheets, 1 inch apart. Using a lightly moistened finger, smooth the tops. Bake the cookies, 1 sheet at a time, until risen and firm, about 15 minutes.
