Proscuitto and Cheese Calzone

A pizza folded into a half moon and filled with your choice of ingredients.


  • 1 each Neapolitan Pizza Dough Recipe, follow as directed
  • Calzone Filling:
  • 1/2 cup Ricotta cheese
  • 1/2 cup Mozzarella cheese, shredded
  • 3 ounces Parmesan cheese, grated
  • 2 tablespoons dried herbs of your choice
  • 2 garlic cloves, minced
  • 1/2 teaspoon fresh rosemary, minced
  • 1/2 teaspoon fresh basil, minced
  • 3 ounces sliced proscuitto
  • 3 ounces peppadews, diced and well drained
  • 1 large egg, lightly beaten


  • 1. Prepare Neapolitan Pizza dough as directed.
  • 2. Punch down dough. Divide in to 10 equal potions. Roll each piece to a 6 inch circle. Set aside and keep covered wit plastic wrap while you prepare the filling.
  • 3. Preheat EGG to 400 degrees F, using indirect heat, plate setter with the feet up and a stainless steel grate. Grease a baking pan and set aside.
  • 4. In a large bowl, combine all the ingredients except for the proscuitto and peppadew peppers.
  • 5. Working with one dough circle at a time, take 2-3 ounces of the cheese filling and place it in the middle of the dough circle. Add 1 slice of proscuitto and a few peppadews. Fold one end over, so you get a half moon shape. Seal the edges by crimping them shut. Repeat with remaining ingredients and dough cirlces. Place the calzones onto the prepared baking pan and using a pastry brush, lightly brush the tops of each calzone with the egg wash.
  • 6. Bake calzones until they are golden brown, about 20 - 25 minutes. Serve hot.
