Pork Tenderloin Sliders

These sandwiches are topped with a fennel apple slaw and finished with an apple bourbon glaze.


  • 12 ounces apple juice
  • 1 cup of your favorite bourbon
  • 3 tablespoon dark brown sugar
  • 1 tablespoon Dijon Mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper
  • 3 pounds pork tenderloin
  • 12 ounces hard apple cider
  • 12 slider (preferably Hawaiian) buns/rolls
  • Fennel Apple Mustardy Slaw:
  • 2 tablespoons mayonnaise
  • 2 tablespoons wholegrain mustard
  • 1 lemon, juiced
  • 2 tablespoons Greek yogurt
  • 2 fennel bulbs julienned and put into iced water
  • 2 Granny smith apples, cored and julienned
  • 1 red onion sliced finely into semi circles
  • 3 tablespoons chopped fresh dill


  • 1. Apple-Bourbon Glaze: Make ahead and store in fridge. Stir together the first 5 ingredients in a medium saucepan. Bring to boil over medium-high heat. Reduce heat to medium, stirring until mixture has been reduced to about 1 cup. Stir in crushed red pepper and cool. Keep refrigerated until needed. Marinade the pork loin in the hard apple cider in a heavy duty Ziploc bag 2-24 hours.
  • 2. For the Slaw Combine the first four ingredients and the dill. Add the remaining vegetables. Marinate for several hours. Season to taste.
  • 3. Slice pork loin into medallions for easy grilling. Set up BGE for direct grilling preheated to 400º. Baste with glaze during grilling. Remove and add to the slider buns with slaw.
