Pork Chops with Traditional Red Eye Gravy

A hearty entrée.


  • 1/2 cup cooked bacon, crumbled
  • 1 small onion,small dice
  • 1/4 cup unsalted butter, divided
  • 3 1/2 tablespoons all purpose flour
  • 1 cup brewed black coffee
  • 1/4 teaspoon salt
  • 1/2 tablespoon brown sugar
  • 2 1/2 pounds pork chops


  • 1. For the Gravy
  • 2. Render the bacon in a preheated cast iron skillet. Remove the bacon, but leave the fat in the pan.
  • 3. Slice the onion thinly and add to the skillet. Reduce heat to low. Saute (and stir) the onions until they're soft and deeply caramelized.
