Popeye Style Buttermilk Biscuits

  • For the Biscuit Base
  • 2 cups all-purpose flour
  • 1/4 cup nonfat powdered milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 packed cup vegetable shortening
  • For the Biscuit Mixture
  • 1 1/2 tablespoons sour cream
  • 1 1/2 tablespoons buttermilk
  • 1 3/4 ounces club soda
  • Melted butter for brushing the biscuits


  • 1. Make the biscuit base: Preheat the Egg to 375°F using indirect heat. In a large bowl sift the flour, milk powder, baking powder, and salt. Using two knives or a pastry blender, cut in the shortening until small, pea-sized pieces remain. (The biscuit base can be refrigerated and stored for up to 1 month.)
  • 2. Make the biscuits: In a large bowl mix half the Biscuit Base with the sour cream, then add the buttermilk and club soda and gently stir until just incorporated. On a well-floured work surface, gently roll out the dough to ¾-inch thickness and generously flour the top. Using a three-inch biscuit cutter, cut out the biscuits and arrange on a parchment-lined baking sheet.
  • 3. Bake the biscuits: Brush the biscuits liberally with melted butter and bake until lightly golden, 20 to 22 minutes. Serve immediately.
