Planked Cod

Planking on hickory can add a layer of flavor to this delicious fish.

Ingredients

  • 1 1/4 pounds cod
  • basic brine, see recipe
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons chili powder
  • 3/4 teaspoon garlic powder
  • 1 1/2 teaspoons smoked paprika
  • 1/8 teaspoon chipotle powder
  • 1 tablespoon salt
  • hickory planks
  • water

Directions

  • 1. Soak the planks in water for at least 2 hours. Brine the cod for 45 minutes. Remove from the brine. Combine all the ingredients for the rub. Rub the fish, reserving a small amount for garnish.
  • 2. Preheat the EGG to 400º using indirect heat. Place the planks directly on the plate setter. Once the planks are hot add the fish. Cook the fish for about 15 minutes, or until it begins to flake. Serve with caponata and a sprinkle of the rub.
