Pickled Kale

Use this recipe for pickled kale to serve on a charcuterie plate at your next gathering.


  • 1 1/2 pounds Kale, stems removed completely and cut into strips
  • 1/2 cup white vinegar
  • 1/3 cup kosher salt
  • 3 cups cold water
  • 1/3 cup pickling spice
  • 1/2 cup sugar


  • 1. Bring all ingredients except the kale in a sauce pot. Bring to a boil until the sugar and salt dissolve. Pour the hot liquid over the kale and let sit in your refrigerator for at least four hours. It can be kept for a few weeks
