Nutritional Information

This is a recipe for a slow roasted Puerto Rican dish.

Ingredients

  • 1 boneless pork shoulder, about 8 pounds, cut into 4 equal pieces
  • 8 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons kosher salt
  • 2 tablespoons white wine or champagne vinegar
  • 1 tablespoon dried oregano
  • 2 teaspoons black pepper
  • 1 teaspoon cumin

Directions

  • 1. Combine all of the ingredients except the pork to form a marinade. Marinade the pork overnight, turning occasionally if needed.
  • 2. Preheat the EGG to 350º using indirect heat. Place the pork and the marinade in a grill safe dish and cover with foil.
  • 3. Roast the pork for about 2-2 1/2 hours or until an internal temperature reaches 160º. Remove the foil and drain off the liquid into another bowl.
  • 4. Continue to cook uncovered until the internal temperature reaches 190º, basting with the leftover marinade every 15 minutes or so.
  • 5. Let rest for 15 minutes, and cut as desired. Season to taste with salt and pepper and serve.
