Pecan Smoked Beef Tenderloin

In this recipe, the beef is cooked at a lower temperature for a longer amount of time, giving it a perfect medium throughout the entire tenderloin.


  • 1 pound beef tenderloin, trimmed
  • Dizzy Pig's Raising the Steaks, as desired
  • pecan wood, for smoking


  • 1. Evenly rub the tenderloin with the rub. Very tightly wrap with saran wrap and let sit overnight in a refrigerator. Before smoking, bring tenderloin closer to room temperature.
  • 2. Preheat EGG to 225ºF using indirect heat and the wood chunks if using. Smoke the beef until an internal temperature reaches 130º (for medium rare) or until desired doneness. Let beef rest for 10 minutes before slicing and serving.

Variation Steak Class 04/07/15: Rub 1 tablespoon seasoned salt 1 tablespoon paprika 2 tablespoons chili powder 2 tablespoons cumin, ground Combine spices together and rub all over the beef tenderloin. Follow recipe as directed.
