Peanut Butter Bread Pudding

Top this bread pudding with jelly for a creative take on a peanut butter and jelly sandwich!


  • 2 cups half and half
  • 1 1/2 cups sugar
  • 4 tablespoons unsalted butter, room temperature
  • 12 slices brioche or cinnamon bread
  • 1 1/2 cups peanut butter, more if desired
  • 8 large egg yolks
  • 2 large egg
  • 2 teaspoons vanilla extract
  • pinch of ground nutmeg
  • pinch of salt
  • 3/4 cups whipping cream
  • favorite jelly, as desired
  • 1 cup peanut butter
  • 1/3 cup sugar
  • 1-2 cups heavy cream


  • 1. Stir half and half and 3/4 cup sugar in medium saucepan over medium heat until sugar dissolves. Remove saucepan from heat; cool mixture to lukewarm.
  • 2. Spread butter over 1 side of each bread slice. Cut bread into 3/4-inch pieces. Divide among soufflé dishes or muffin cups
  • 3. Whisk peanut butter, yolks, eggs, vanilla, nutmeg and salt in medium bowl until blended. Add half and half mixture; whisk until smooth. Pour peanut butter custard over bread in dishes, dividing equally. Let stand 30 minutes, occasionally pressing on bread to submerge.
  • 4. Preheat EGG to 350°F using indirect heat. Place pan on grate. Bake puddings until knife inserted into center comes out clean, about 25 minutes. Transfer puddings to rack and cool completely.
  • 5. While they are cooling, combine the second peanut butter, sugar and heavy cream in a sauce pot. Once combined evenly, set aside and keep warm.
  • 6. Serve immediately with jelly and warm peanut butter cream.
