Papaya Profiteroles

These delicious "cream puffs" are filled with a papaya buttercream.


  • For the Dough:
  • 125 grams milk
  • 125 grams water
  • 125 grams butter
  • 150 grams flour
  • 5 grams salt
  • 10 g sugar
  • 5 eggs
  • For the Buttercream:
  • 8 ounces butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon zanthan gum
  • 1 1/2 papaya, peeled, seeded and pureed
  • For the Syrup:
  • 8 ounces sugar
  • 8 ounces mixed berries of choice


  • 1. Bring the water, milk, butter and sugar to a boil. Remove from the heat and add the flour and salt. Mix over low heat until a dough forms.
  • 2. Let the dough cool for about 5 minutes. Put into a mixer and add one egg at a time, mixing well after each addition.
  • 3. Put the dough in a pastry bag and pipe into desired sized circles.
  • 4. Preheat the EGG to 400º using indirect heat. Bake the puffs until golden brown and cooked, about 15-25 minutes depending on the size.
  • 5. Remove from the grill and pierce each puff with a knife to let some of the steam out. Let cool completely before filling with the buttercream.
  • 6. For the filling: Mix the butter and powdered sugar until blended well. Add the zanthan gum and the papaya and mix until blended. Season to taste.
  • 7. Combine the fruit and sugar in a saucepan and boil until slightly reduced and to desired thickness. Puree the syrup and strain.
  • 8. Fill the cream puffs with the buttercream and drizzle with the syrup.
