Noodle Kugel

Nutritional Information

Noodle Kugel is a pasta dish that is made with egg noodles, cheese and vegetables.


  • 1 pound macaroni
  • 1/4 cup butter
  • 1 small onion, chopped
  • 8 ounces sliced mushrooms
  • salt and pepper to taste
  • pinch of red pepper flakes
  • pinch of nutmeg
  • 2 cups milk
  • 1/4 cup flour
  • 15 ounces cottage cheese
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese


  • 1. Prepare the macaroni according to package directions; drain.
  • 2. In a large saucepan, melt the butter over medium heat. Add the onion and mushrooms; saute for 2-3 minutes until vegetables are softening. Season with salt, pepper, red pepper flakes and nutmeg; cook until fragrant.
  • 3. Stir in flour and coat everything with it. Slowly pour in the milk, stirring to incorporate evenly before pouring more. Cook 5 minutes or so, until sauce thickens.
  • 4. Stir in cottage cheese, then pour everything into the prepared casserole dish.
  • 5. Sprinkle with the mozzarella, and bake for 20 minutes. Sprinkle with the Parmesan and cook for 15 more minutes until cheese is golden brown and casserole is bubbling.
