New York Strip with Aged Gouda Potatoes Gratin

NY Strip is a very flavorful cut of meat that is easy to prepare without a lot of additional work. The aged Gouda in this recipe will add a nutty flavor to your potatoes.


  • 48 ounces Wet Aged NY Strip, Salt, pepper, garlic powder
  • 2 cups leeks, sliced
  • 12 Russet potato, slice thin
  • 2 1/2 tablespoons thyme
  • 2 teaspoons Kosher Salt
  • 2 teaspoons black pepper
  • 6 cups cheddar cheese
  • 4 cups aged gouda
  • 4 cups heavy (whipping) cream


  • 1. Preheat Egg to 350°F. In a small skillet over medium-low heat, melt the butter. Add the sliced leeks and saute for about 5 minutes, or until soft. Remove from heat and set aside. In a large bowl, add the sliced potatoes, thyme leaves, salt and pepper, 1 cup of the Cheddar cheese, ½ cup of the Gouda cheese. Add the leeks and butter from the skillet, as well as ¾ cup of cream and the sherry and toss to combine. Place the potato mixture into a buttered shallow baking dish and press down to smooth. Pour over the remaining ¼ cup cream and add the remaining cheeses to the top. Place in the preheated Egg and bake for 45 minutes, uncovered. Remove from Egg and allow to set for 5 minutes prior to serving.
  • 2. For the NY Strip preheat Egg to 350ºF with plate setter for indirect heat. Place the stainless steel grate on top of plate setter. Place Strip loin on grate and roast until internal temperature reaches desired doneness.
