Muffaletta Sandwich

A popular sandwich originating among Italian immigrants in New Orleans, Louisiana.

Ingredients

  • 1 each Parker house rolls recipe
  • For the Olive Salad:
  • 2 cups a mix of green and kalamatta olives, pitted
  • 1 small shallot, rough chopped
  • 2 ribs celery, rough chopped
  • 1/2 cup roasted red peppers, rough chopped
  • 2 tablespoons capers, rinsed and drained
  • 4 each Italian hot pickled peppers (we used pepperoncinis)
  • 3 1/2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • to taste kosher salt
  • to taste fresh ground black pepper
  • 5 ounces salami, thinly sliced
  • 5 ounces capicola, thinly sliced
  • 5 ounces mortadella, thinly sliced
  • 5 ounces provolone cheese, thinly sliced

Directions

  • 1. Follow parker house rolls recipe as instructed.
  • 2. For the Olive Salad:
  • 3. In a bowl of a food processor, combine the olives, shallots, celery, red peppers, capers and hot peppers. Pulse to combine. Remove from food processor and transfer to a bowl. Add the olive oil and red wine vinegar. Mix to combine. Adjust seasoning with kosher salt and fresh ground pepper. Set aside.
  • 4. To Assemble Sandwich:
  • 5. Slice rolls in half. Spread the bottom of the rolls with the olive salad. Evenly distribute the salami, capicola, mortadella and provolone between the rolls. If you have extra olive salad, spread it on the tops of the rolls and top the sandwiches. Cut the sandwich in half and serve.
