These cute sandwiches are great for any gathering.

Ingredients

  • For the Biscuits:
  • 2 3/4 cups all purpose flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 stick unsalted butter
  • 1 cup Buttermilk
  • For the Sandwich:
  • 1/2 clam yellow cherry tomatoes, halved
  • 2 cups mayonnaise
  • 48 ounces thick-cut bacon, rendered
  • 1 small bunch arugula

Directions

  • 1. Preheat the Egg to 375 degrees F using indirect heat.
  • 2. In a large bowl, combine dry ingredients; cut in butter with a pastry cutter. Add buttermilk and stir.
  • 3. On a floured surface, roll dough to 1/2-inch thickness. Using a 1 /2-inch-round cutter, cut out biscuits; bake on a baking sheet until golden, about 15 minutes.
  • 4. Add apple wood to the Egg (if desired) and roast the halved tomatoes for 20 minutes.
  • 5. In a small bowl, mix tomato with mayonnaise. Split biscuits. Layer each with mayo mixture, bacon and arugula.
