Mexican Style Corn

Nutritional Information

Once you have this corn, you will never want it prepared differently again!


  • 6 ears corn, shucked and cleaned
  • 1/2 red onion
  • vegetable oil, as needed for grates
  • 3/4 cup cotija cheese
  • 3/4 cup mayonnaise
  • 2 tablespoons roughly chopped parsley
  • 2 limes, zested
  • 1 ounce chipotles, chopped, or to desired taste
  • salt and pepper, to taste


  • 1. Preheat the EGG to 400º using direct heat and a cast iron grate. Grill the onion on one side until char marks form. Remove from the grill, chop and set aside. Grill the ears of corn for about 2-3 minutes per side on all sides until evenly charred. Remove from the grill and cut off the cobb. Keep warm.
  • 2. Combine the corn and onions with the remaining ingredients. Season to taste and serve warm.
