Mejadra is a heavily seasoned rice dish that is easy and very flavorful!

Ingredients

  • 337 1/2 g green or brown lentils
  • Fried Onions:
  • 4 1/2 medium onions
  • 4.5 tablespoons all-purpose flour
  • 375 ml vegetable oil
  • For the Rice:
  • 1 1/2 teaspoons ground cumin
  • 1 tablespoon ground coriander
  • 337 1/2 g basmati rice
  • 3.0 tablespoons olive oil
  • 3/4 teaspoon ground turmeric
  • 2 1/4 teaspoons ground allspice
  • 2 1/4 teaspoons ground cinnamon
  • 1 1/2 teaspoons sugar
  • 525 ml water
  • Salt and freshly ground black pepper
  • dried currants, as desired

In our 6/6/17 & 6/7/17 seafood class we omitted the fried onions and used golden raisins instead of currants.
