Mediterranean Baby Back Ribs

Nutritional Information

These baby backs are rubbed with garlic, olive oil and herbs, then roasted until tender.


  • 1/4 cup balsamic vinegar
  • 1/4 cups extra-virgin olive oil
  • 2 medium cloves garlic, minced
  • 2 tablespoons chopped fresh aromatic herbs (thyme, sage, rosemary, marjoram, or a mix)
  • 1 tablespoon kosher salt
  • 1 tablespoon ground black pepper
  • 1 racks baby back ribs, peeled


  • 1. Rub the ribs with everything except the balsamic. Refrigerate overnight.
  • 2. Preheat the Egg to 350º using indirect heat. Roast the ribs for 3 hours, basting with the balsamic as desired. Remove from the grill and let rest for 20 minutes before cutting into individual bones and serving with additional balsamic if desired.
