Marinated Thai Spareribs

Nutritional Information

These pork ribs are marinated overnight then glazed with the marinade while smoking.


  • 1 small shallot, sliced
  • 1/2 bunch green onions, sliced
  • fresh ginger, to taste
  • 4 cloves garlic, minced
  • 1 cup coarsely chopped fresh cilantro
  • 1 cup soy sauce
  • 1/8 cup Thai or Vietnamese fish sauce, or to taste
  • 1 tablespoon black pepper, or to taste
  • 1/8 cup sugar
  • 1/3 cup brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 4 pounds pork spare ribs, peeled
  • apricot wood, for smoking if desired


  • 1. Place all ingredients except the ribs in a food processor, and process until well blended.
  • 2. Place the ribs in a non aluminum pan and cover with the marinade. Refrigerate overnight.
  • 3. Remove the ribs and transfer the marinade to a sauce pot.
  • 4. Preheat the EGG to 275º using indirect heat and smoking wood. Bring the marinade to a boil and set aside.
  • 5. Smoke the ribs for 3 hours. For the next 2 hours, baste the ribs with the cooked marinade. Once ribs are cooked, remove from the grill and rest for 1 hour, making sure to keep them warm. Serve immediately.
