Maple Glazed Vegetables

Nutritional Information

These vegetables are tossed with maple syrup and roasted on the Egg.

Ingredients

  • 1 ¼ lbs. parsnips, peeled, halved lengthwise
  • ¾ lbs. thin carrots, peeled
  • 4 bacon, rendered
  • 3 fresh thyme
  • ¼ cup pure maple syrup
  • Coarse salt and freshly ground pepper

Directions

  • 1. Preheat the EGG to 400º using indirect heat. Place parsnips, carrots and thyme in a single layer on a rimmed baking sheet.
  • 2. Drizzle with syrup; season with salt and pepper. Toss well to combine.
  • 3. Bake until vegetables soften and most of the maple syrup has been absorbed, about 30 minutes. Discard the thyme. Serve immediately.
