To achieve the best flavor, let this brisket sit with the rub overnight.


  • 1/4 cup brown sugar
  • 2 tablespoons seasoned salt
  • 2 tablespoons paprika
  • 2 tablespoons pepper
  • 1/3 cup dizzy pig raging river seasoning
  • 1/2 cup yellow mustard
  • hickory wood, for smoking
  • maple bbq sauce, see recipe
  • 5 pounds brisket points


  • 1. Mix the dry ingredients thoroughly in a medium bowl. Mix in the mustard until a smooth paste forms.
Spread the mixture over the raw brisket, working it into every crack. The brisket should be marinated like this overnight.
  • 2. Preheat the EGG to 225º using indirect heat. Smoke the brisket until an internal temperature reaches 160º. Remove from the grill, wrap in foil and continue to cook until an internal temperature reaches 185º F.
