Maple and Apple Cider Gastrique

Nutritional Information

In class on 11/19/18 and 11/20/18 we used this gastrique for the butternut puree.

Ingredients

  • 1/2 cup maple syrup
  • 1/2 cup malt vinegar
  • 1/2 cup apple cider
  • 1 inch fresh ginger, cut into slices
  • 1/2 oz. lime leaf
  • 1 dried arbol chili, toasted
  • 1 tsp whole coriander seed , toasted
  • For Topping:
  • 3 oz. chevre
  • 3 oz. hazelnuts
  • .25 oz. tarragon
  • 1 oz. chili flakes
  • 1 oz. juniper berries

Directions

  • 1. Combine all ingredients for gastrique into pan and reduce until syrupy. Top puree with remaining ingredients.
