Lobster and Crawfish Rolls

Our take on the New England lobster roll.


  • 12 ounces lobster, cooked
  • 12 ounces crawfish, cooked
  • 1/2 cup mayonnaise
  • 3/4 cup celery ribs, finely diced
  • 1/8 cup chives, finely minced
  • 4 tablespoons lemon juice
  • to taste salt and black peper
  • 1/2 cup unsalted butter, melted
  • 10 Top-split hot dog buns


  • 1. Preheat a pan on the EGG at 350 degrees on direct heat.
  • 2. To the pan add the lobster and crawfish. Cook until heated through. Remove from the EGG and transfer to a large bowl.
  • 3. To the bowl, add the mayonnaise,celery, chives and lemon juice. Toss until thoroughly combined and season to taste with salt and black pepper.
  • 4. Brush the tops of the hot dog bun with the melted butter and heat on the EGG at 350 degrees on direct heat until warmed through.
  • 5. Stuff 3 ounces of the lobster-crawfish mixture into the top slit of the bun.
