Nutritional Information

Steak fish works well for this recipe, because the fish is brushed with a glaze and smoked until flaky.

Ingredients

  • 1 1/2 pounds steak fish of choice
  • basic brine, see recipe
  • 2 tablespoons mild honey
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon gochujang
  • 1 tablespoon white miso paste
  • 1 teaspoon soy sauce
  • 2 garlic cloves, peeled and minced
  • 1 teaspoon fresh ginger
  • 1 teaspoon toasted sesame oil
  • toasted sesame seeds, for garnish
  • smoking wood of choice

Directions

  • 1. Brine the fish for about 30 minutes. Remove from brine and pat dry.
  • 2. In a small bowl, whisk together or use a fork to combine the honey, vinegar, gochujang, miso, soy sauce, garlic, ginger and sesame oil. Separate out about 1/3 of the mixture and set aside. Use the rest to brush over the fish. Let the fish rest in the refrigerator for at least 30 minutes but up to an hour to let the fish marinate.
  • 3. Preheat the Egg to 225º using indirect heat and smoking wood of choice. Smoke the fish until it begins to flake.
  • 4. Brush the remaining glaze over the fish and garnish with toasted sesame seeds.
